My Favorite Things: February 2022

In 2002, I started PK with an email newsletter called “My Favorite Things”. I carried on for a few years but stopped because I just didn’t know what to do with it to grow it further.

To celebrate 20 years of PK, I’ve decided to bring back an abbreviated version of My Favorite Things by sharing five of my favorites for each month.

Let’s start with February!

THESE HOMEMADE POT PIES

Homemade Pot Pie

It’s cold. It’s snowing. It’s icy. It’s raining. I can’t. However, I CAN make these super easy pot pies to warm my heart and soul:

~Early in the day, thaw out a sheet of puff pastry dough. (It’s in the freezer section of the grocery.)
~Preheat oven to 350 degrees.
~Take the individual oven-safe bowl you’re going to make your pot pie in and use it as guide to cut out a square from the thawed puff pastry dough. (You want it to fully cover the top with some of the dough going down the sides.)
~Pick your favorite “pot pie” veggies and diced chicken, already cooked. (I use diced potatoes, corn, French-style green beans and mushrooms along with pre-cooked chicken strips. I’m here for quick and easy right now.) Put them all in a bowl and mix with a can of Cream of Chicken soup and a half a can of water.
~Once everything is well coated, ladle the mixture into the oven-safe individual bowl then top generously with shredded cheddar cheese and your puff pastry square. Brush the top with egg white to crisp it up and give it a nice shine.
~Place the bowl on a baking sheet and bake for 30-35 minutes.

It's yum…really, really yum.

Yes, I know the Bengals didn’t win the Super Bowl. Don’t care. Joey B has won my heart (and loins) and I will forever be rooting for them to win that ring. Also, I used to work for the Bengals so how can I not cheer for them, bless their hearts.

This sweatshirt is so comfy plus I love the cut-out cuffs at the sleeve and on the sides. It’s chic and sassy. (Note: Don’t sleep on Henry Dry Goods’ bags.)

Most eye cream for me is sticky/tacky and smells funny. It doesn’t sit right and feels clunky. This eye cream is soft, soothing, and cooling. It feels soooo good on my tired eyes at the end of the day. I can just feel the hydration happening…ahhhh!

Simple Abundance Book

Simple Abundance by Sarah Ban Breathnach ($14.99)

My friend Erin gave me this book, which I did read back in the 90s, and I am obsessed all over again...on a whole other level. It is part of my daily quiet time routine and it is really doing a number on my attitude of gratitude. It’s been updated for the times so it speaks to our overworked, over-stimulated, over-social media-ed, disconnected selves. I know I need to hear it all.

Dolly Parton Scent from Above (Price Varies)

I got this for Christmas and thought I won the lottery, especially since it came with a full-size body mist. I worried that it wouldn’t smell good…not that I would care because…Dolly. But it smells great! It’s got some fruity top notes with a spicy base. It’s light and not too over-powering. I’m sorry not sorry but she’s replaced my Coco.
